Once you know the cost of ingredients per portion, you can set a target. In many restaurants, the aim is to keep the cost of ingredients for the main course at, for example, 28–35 % of the selling price, depending on the concept and labour costs. Choose one target and stick to it.
Let’s continue with an example: the cost of raw materials is €3.59. If the target is 32 %, the selling price (VAT at 14 % is accounted for separately at the till) is 3.59 € / 0.32 = 11.22 €. If the concept requires a higher margin, with 28 % the price becomes €12.82. From this, you can immediately see whether the portion is ‘too cheap’ or ‘too large’.
