Rainbow trout is the easiest 'everyday' protein when you keep two basic solutions in the fridge: fresh fillet and ready-to-eat smoked fish. From these, you can make repeatable meals in 10-15 minutes, which only require a couple of standard side dishes, and work lunches can be made without a cooking ordeal.

Rainbow trout as an everyday protein: 5 ideas for fresh fillets when you have 10–20 minutes

1) Traybake "lemon butter fillet" and vegetables: place the fillet on baking paper, add salt, pepper, lemon, a knob of butter. Oven at 200 °C for about 12–15 minutes depending on the thickness of the fillet. Broccoli or root vegetables on the same tray. You get two meals at once, one for next day's lunch.

2) Pan-fried fillet and warm salad: pan-fry the fillet for 3–4 minutes per side, if the pieces are about 2 cm thick. Mix in pre-cooked potato or pearl barley, rocket, and cucumber. This is easy to portion into a container and doesn't require a dressing when you add lemon juice and a dash of oil on top.

3) “Creamy” but light pasta sauce: heat 1 dl of cooking cream or oat cream in a pan, add lemon zest and dill. Crumble in the fried rainbow trout and mix with the pasta. Make 2 portions at once, one to take to work.

4) Sockeye Salmon Tacos: Season the fillet pieces with taco seasoning or smoked paprika, quickly fry and assemble in tortillas. Fill with shredded cabbage, avocado and a yogurt dressing. You get variety without a new recipe, as the base is always the same.

5) Oven-ready fillet: season the night before and put in the oven first thing in the morning or for your remote working lunch. Once the fillet is cooked, pull it into pieces with a fork and divide into two containers. This works particularly well if you order the fillet pre-portioned.

When you keep fresh fillet and ready-smoked fish in the fridge, you get trout as a daily protein source without the hassle of cooking.

6) Warm-smoked fish rice bowl: Warm-smoked rainbow trout is already cooked, so you can assemble the lunch directly in the container. Place rice or quinoa at the bottom, then add 120–150 g of smoked fish, cucumber, edamame, and a sprinkle of sesame seeds on top. If you want a sauce, mix yoghurt with lemon and mustard.

7) Cold-smoked salmon rye bread "with double protein": rye bread, cream cheese, cold-smoked rainbow trout and a hard-boiled egg. Wrap in foil. This will save the day when your work lunch is running late and you're getting hungry fast.

8) Smoked fish potatoes in the microwave: heat 2 medium potatoes in the microwave, halve them and top with hot-smoked fish and quark. Season with dill and black pepper. You can have a warm lunch in 5–7 minutes without a pan.

9) A salad that keeps you full: make a base of iceberg lettuce or a cabbage mix and add 150g smoked fish, 100g beans or chickpeas, and a handful of nuts. A numerical rule of thumb: when you have about 30–40g of protein on your plate (e.g. 150g rainbow trout), hunger stays at bay better in the afternoon.

10) "Guest-friendly" smoked fish pasta: mix cold pasta, peas and hot-smoked rainbow trout, add a dash of oil and lemon juice. This improves in the fridge, so make it in the evening and take it with you in the morning.

Here's how to make rainbow trout a work lunch that you'll want to repeat week after week

Choose one base and keep the sides the same. Using the same formula saves you time and you still eat varied: (1) protein 120–180 g of trout, (2) carbohydrate such as potato, rice or pasta 150–250 g, (3) vegetables two handfuls. You can assemble this by eye without weighing.

Here's an example calculation for two days: you order 600g of fresh fillet. Cooked and portioned, this is enough for four 150g servings. By making a tray bake (2 servings) on Monday and tacos (2 servings) on Tuesday, you get four protein bases from one purchase and avoid waste.

What to watch out for when using trout often in everyday life (salt, allergies, cold chain)

Smoked fish is a lifesaver in everyday life, but salt can easily accumulate if you eat smoked products daily. If you're watching your salt intake, alternate between fresh fillet and smoked fish, and pay attention to the side dishes; for example, ready-made sauces and salty cheeses can quickly increase the total amount. You can find background information for your choices on the page Salting and salt content of salmon.

When it comes to workplace lunches, the cold chain is key. Pack smoked and gravlax fish in a cool bag if a fridge isn't immediately available. And if there's a fish allergy in the family or you're preparing food for many, ensure you have separate cutting boards and clean utensils. You can find the instructions compiled to avoid mistakes: Allergens and the prevention of cross-contamination in fish and shellfish products.
